Salty Caramel - Salted Caramel Ice Cream |
Today, we continue our survey of salted caramel pints with the Columbus-based Jeni's brand. Jeni calls her flavor Salty Caramel and it is considered one of her signature flavors. This youtube video from several years ago describes how she makes this flavor. It is really quite interesting how the sugar is cooked while still dry and it hear her describe all the flavors that come out during this caramelization process. Nothing more to say after watching that except "let's eat!"
Opening the pint, the caramel base is a solid caramel color but not too dark. The flavor is quite good. The salt is quite noticeable right away. Compared to the other salted caramel pints that I've had recently, it is a bit saltier than average but it is not super-salty. The texture is thick and creamy. Jeni uses tapioca syrup as a thickener and it is doing a really good job here, especially with the extra salt present.
This is a really good pint of salted caramel. Jeni herself describes it quite well in her video above. The flavor is good by itself but is versatile enough to go well with a topping too. Fans of salted caramel and of Jeni's will like this pint for sure.
